Assistant Cook
Job Description
Under the direction of the Food Services Director and Principal Cook, the Assistant Cook is responsible for the preparation of food for approximately 30,000 guests during the conference season and 4,000 guests during our BRUIN WOODS season.
UCLA Lake Arrowhead Conference Center is located 100 miles east of the UCLA campus in the San Bernardino Mountains (https://binged.it/2JQ66jf).
Must be available to work varying schedules; including evenings, weekends, holidays and over time in order to reflect the business needs of the department.
The targeted hourly rate for this position is between the posted minimum to $17.83 hourly.
Job Qualifications
1. Culinary and Manual Skills – Demonstrated acceptable capabilities in the following food preparation techniques:
Deep Fat Frying
Grilling/Broiling -meats, fish, seafood
Basic Baking
Roasting/Braising
Sautéing
Soup and Sauce Assembly and Preparation

2.Speed of Preparation and Service – Ability to prioritize assignments to complete work in a timely and accurate manner to achieve appropriate speed of production and service.

3. Perform work to standards compliant with UCLA, County and State Health and safety regulations.

4. Production Quantity Control – ability to relate quantity to be prepared to meal count and recipe quantities.

5. Portion Control – ability to control portions of service to predetermined levels.

6. Sanitation & Food Hygiene – has the equivalency of a Food Handlers Card for food service sanitation; knowledge of Conference Center Sanitation procedures.

7. Equipment Skills – has demonstrated capabilities in the safe use of the following pieces of kitchen equipment:
Ovens; Convection and radiated heat
Deep Fryers/Frylators
Broilers; French, Open Broiler, Salamander
Steam Kettles – all steam cooking equipment
Food Mixers/Processors
Buffalo Chopper and Attachments

8. Ability to lift items weighing up to sixty pounds such as dishes, delivery boxes, trays of food, chafing dishes, etc.

11. Ability to stand continuously throughout an eight-hour shift on carpeted and uncarpeted surfaces.
